I know we left the last operaioin DALS on a bit of a sour note. But I’m over it for now. I went on vacation and ate non-kid friendly food the whole time. It made me feel better.
Fish Cakes
- 3 firm flaky whitefish fillets, I used cod (about 1 1/4 pounds total)
- 1/2 teaspoon chili powder
- 1/2 teaspoon dried oregano
- salt and pepper
- 1/3 cup mayonaise
- 1 egg, lightly-whisked
- 1 tablespoon fresh lime juice
- 1 large baking potato, baked and flaked (bake in the microwave for 10 minutes so its quick)
- handful of cilantro, finely chopped
- 2 cups of bread crumbs (panko or regular)
- 3 tablespoons vegetable oil
- lime wedges for serving
Preheat over to 450 degrees
Sprinkle fish fillets with chili powder, oregano, and salt and pepper. Roast for 5ish minutes, or until fish is cooked through. Let it cool, then flake it into pieces using a fork.
In a mixing bowl, whisk together the mayo, egg, and lime juice. Add the fish, potato, cliantro, and more salt. I forgot the cilantro — and in hindsight this was probably a good idea. Green = yucky in my house apparently. I love cliantro though. Toss the ingredients together and chill for 30 minutes in the fridge if you have time. Apparently it makes it easier to pack but doesn’t make or break the recipe. I chilled it for about 20 and it was still very delicate to pack into patties.
Spread bread crumbs onto a dinner plate. I will forever use Panko now, it really is so much better than bread crumbs when it comes to a crispy outside. Pack into patties and coat in crumbs.
Heat the oil in a large skillet over medium heat. I found that glugs and not 3 tablespoons was necessary and that medium-high helped firm them up instead of leaving them flimsy. Fry the patties in batches of four and cook until the crusts are golden. About 5 minutes on each side.
Included is a recipe for dipping sauce that I intended on making but forgot to buy sour cream. I’m definitely trying it next time. These were really really good. And EVERYONE liked them. Yes, everyone!! That’s a 5-star meal around these parts! Middle-man keeps asking me to make them again for him! That’s unheard of!
If you want to make the dipping sauce… 1/2 cup sour cream, 2 tablespoons fresh lime juice, 1/2 teaspoon sugar, and 1 tablespoon of chopped fresh cilantro.
