operation DALS (9)

I know we left the last operaioin DALS on a bit of a sour note.  But I’m over it for now.  I went on vaca­tion and ate non-​​kid friendly food the whole time.  It made me feel better.

Fish Cakes

  • 3 firm flaky white­fish fil­lets, I used cod (about 1 1/​4 pounds total)
  • 1/​2 tea­spoon chili powder
  • 1/​2 tea­spoon dried oregano
  • salt and pepper
  • 1/​3 cup mayonaise
  • 1 egg, lightly-​​whisked
  • 1 table­spoon fresh lime juice
  • 1 large bak­ing potato, baked and flaked (bake in the microwave for 10 min­utes so its quick)
  • hand­ful of cilantro, finely chopped
  • 2 cups of bread crumbs (panko or regular)
  • 3 table­spoons veg­etable oil
  • lime wedges for serving

 

Pre­heat over to 450 degrees

Sprin­kle fish fil­lets with chili pow­der, oregano, and salt and pep­per.  Roast for 5ish min­utes, or until fish is cooked through.  Let it cool, then flake it into pieces using a fork.

In a mix­ing bowl, whisk together the mayo, egg, and lime juice.  Add the fish, potato, cliantro, and more salt.  I for­got the cilantro — and in hind­sight this was prob­a­bly a good idea.  Green = yucky in my house appar­ently.  I love cliantro though.  Toss the ingre­di­ents together and chill for 30 min­utes in the fridge if you have time.  Appar­ently it makes it eas­ier to pack but doesn’t make or break the recipe.  I chilled it for about 20 and it was still very del­i­cate to pack into patties.

Spread bread crumbs onto a din­ner plate.  I will for­ever use Panko now, it really is so much bet­ter than bread crumbs when it comes to a crispy out­side.  Pack into pat­ties and coat in crumbs.

Heat the oil in a large skil­let over medium heat.  I found that glugs and not 3 table­spoons was nec­es­sary and that medium-​​high helped firm them up instead of leav­ing them flimsy.  Fry the pat­ties in batches of four and cook until the crusts are golden.  About 5 min­utes on each side.

Included is a recipe for dip­ping sauce that I intended on mak­ing but for­got to buy sour cream.  I’m def­i­nitely try­ing it next time.  These were really really good.  And EVERYONE liked them.  Yes, every­one!!  That’s a 5-​​star meal around these parts!  Middle-​​man keeps ask­ing me to make them again for him!  That’s unheard of!

 

If you want to make the dip­ping sauce… 1/​2 cup sour cream, 2 table­spoons fresh lime juice, 1/​2 tea­spoon sugar, and 1 table­spoon of chopped fresh cilantro.
