operation DALS (3)

I love meat­balls.  Frozen, fresh, plain, sauced, tooth-​​picked, or forked.  Love.  Meatballs.

 

Por­cu­pine Meatballs
  • 1 pound ground beef
  • 1/​2 cup uncooked rice
  • 1 table­spoon finely chopped onion
  • 2 table­spoons diced green bell pepper
  • 1 tea­spoon salt
  • 1 gar­lic clove, minced… nope, still using the jar
  • 2 cups tomato juice
  • 4 whole cloves
  • 1/​2 tea­spoon cinnamon
  • 2 table­spoons sugar
  • 1 table­spoon Worces­ter­shire sauce

Com­bine the first 6 ingre­di­ents in a large bowl.  Shape into small 1 inch-​​ish balls.

In a deep skil­let whisk the rest of the ingre­di­ents and bring to a simmer.

 

Drop in the balls and cover, sim­mer for 30 min­utes or until the rice is cooked and spik­ing like a por­cu­pine.  Occa­sion­ally flip the balls and spoon the liq­uid over them.

Be sure to remove the cloves before serv­ing.  I served them with egg noo­dles and sliced apples.

To repeat… I love meat­balls.  Frozen, fresh, plain, sauced, tooth-​​picked, or forked OR porcupined!
