I love meatballs. Frozen, fresh, plain, sauced, tooth-picked, or forked. Love. Meatballs.
Porcupine Meatballs
- 1 pound ground beef
- 1/2 cup uncooked rice
- 1 tablespoon finely chopped onion
- 2 tablespoons diced green bell pepper
- 1 teaspoon salt
- 1 garlic clove, minced… nope, still using the jar
- 2 cups tomato juice
- 4 whole cloves
- 1/2 teaspoon cinnamon
- 2 tablespoons sugar
- 1 tablespoon Worcestershire sauce
Combine the first 6 ingredients in a large bowl. Shape into small 1 inch-ish balls.
In a deep skillet whisk the rest of the ingredients and bring to a simmer.
Drop in the balls and cover, simmer for 30 minutes or until the rice is cooked and spiking like a porcupine. Occasionally flip the balls and spoon the liquid over them.
Be sure to remove the cloves before serving. I served them with egg noodles and sliced apples.
To repeat… I love meatballs. Frozen, fresh, plain, sauced, tooth-picked, or forked OR porcupined!
